Courgettes can be prepared for winter by either freezing or pickling. Tips on freezing courgettes and a versatile pickling recipe, which can also be used for pickling tomatoes and cucumbers, were revealed on the Latvian Radio programme “Kā labāk dzīvot” by culinary and gastronomy specialist, popular cookbook author and journalist Iveta Galēja, and horticultural specialist Saiva Pekuse from the “Neslinko” farm.
